发酵罐概述Overview Of Fermentation Tank
常见的发酵罐分为固体发酵罐和液体发酵罐。发酵罐根据容积和用途不同,分为种子罐(菌种发酵罐)和发酵罐。发酵罐根据需氧类型的不同又分为通风式发酵罐和厌氧发酵罐。发酵罐、种子罐,有碳钢制、不锈钢、高镍基合金等,主要用于生化发酵生产。如生产味精、柠檬酸、酶制剂、溶剂、制药、食品等行业。

一、发酵罐的基本条件Basic Conditions Of Fermentation Tank
机械搅拌发酵罐是发酵工厂常用类型之一。它是利用机械搅拌器的作用,使空气和醪液充分混合,促使氧在醪液中溶解,以保证供给微生物生长繁殖、发酵所需要的氧气。使用发酵罐的基本要求:
Mechanical stirring fermentor is one of the commonly used types in fermentation plants. It uses the function of mechanical stirrer to fully mix air and mash, and promote the dissolution of oxygen in mash, so as to ensure the supply of oxygen required for microbial growth, reproduction and fermentation. Basic requirements for using fermentor:
1、发酵罐应具有适宜的径高比。发酵罐的高度与直径之比一般为1.7~4倍左右,罐身越长,氧的利用率较高。
2、发酵罐能承受一定压力。由于发酵罐在消毒及正常工作时,罐内有一定的压力(气压与液压)和温度,因此罐体各部件要有一定的强度,能承受一定的压力。
3、发酵罐的搅拌通风装置使气液充分混合,保证发酵液必须的溶解氧。
4、发酵罐应具有足够的冷却面积。微生物生长代谢过程放出大量的热量,为了控制发酵过程不同阶段所需的温度,应装有足够的冷却面积。
5、发酵罐内应尽量减少死角,避免藏垢积污,灭菌能彻底,避免染菌。
6、搅拌器的轴封应严密,尽量减少泄漏。

2、The fermentation tank can withstand certain pressure. Since there is a certain pressure (air pressure and hydraulic pressure) and temperature in the fermentation tank during disinfection and normal operation, all parts of the tank must have a certain strength and can withstand a certain pressure.
3、The stirring and ventilation device of the fermentation tank can fully mix the gas and liquid to ensure the dissolved oxygen of the fermentation broth.
4、The fermentation tank shall have sufficient cooling area. Microbial growth and metabolism process releases a lot of heat. In order to control the temperature required in different stages of fermentation process, sufficient cooling area should be installed.
5、The dead corner shall be minimized in the fermentation tank to avoid dirt accumulation. The sterilization can be complete and bacteria contamination can be avoided.
6、The shaft seal of the mixer shall be tight to minimize leakage.
二、发酵罐罐体尺寸比例Size Proportion Of Fermentation Tank
● 罐体各部分的尺寸有一定的比例,罐的高度与直径之比一般为1.7~4倍左右。
● 发酵罐通常装有两组搅拌器,两组搅拌器的间距S约为搅拌器直径的三倍。
● 对于大型发酵罐以及液体深度HL较高的,可安装三组或三组以上的搅拌器。
● 最下面一组搅拌器通常与风管出口较接近为好,与罐底的距离C一般等于搅拌器直径Di,但也不宜小于0.8Di,否则会影响液体的循环。

三、发酵罐的结构Structure Of Fermentation Tank
好气性机械搅拌发酵罐是密封式受压设备,主要部件包括罐身、搅拌器、轴封、打泡器、联轴器、中间轴承、空气吹泡管(或空气喷射器)、挡板、冷却装置、人孔以及管路等。
系统由发酵罐,空气处理系统、蒸汽净化系统、电器控制系统、恒温系统及管路、阀门、辅助系统,传感器与一次仪表系统,下位机控制系统(现场PLC控制系统,二次仪表),上位机系统以及台架等组成。
